Okay, this one isn’t “Hey Jude” caliber, but I love the message nonetheless.  McCartney is a champion of the worldwide Meatless Monday movement.  Sir Paul is a rather famous vegetarian himself, but I think he realizes that strict vegetarianism isn’t a lifestyle everyone is going to choose.  Rather than suggest

everyone go straight from hamburgers to celery, Paul suggests we all just take one day a week and declare it a meat-free holiday!

Personally, I love this idea.  My husband and I started Meatless Mondays last year (for the most part…) and I liked it so much that I generally try to stay meat free 2 days a week now.  There are so many good reasons to give this a try:

  1. Your Health!  Eating more veggies is good for us in all respects: cancer risk, diabetes risk, heart disease risk, more vitamins, curb obesity… the list is long and only getting longer!
  2. The Environment! You can reduce your carbon footprint, total water usage and our whole country’s dependence on fossil fuel just by going meatless a day or two a week.  Did you know that on average, a pound of meat requires 2,000 more gallons of water and 13 times more fossil fuels to produce than a pound of vegetables?
  3. It adds up!  During food rationing in World War I, Herbert Hoover (while he was working in Woodrow Wilson’s Cabinet as Food Administrator) called on families to go Meatless on Monday.  Over 10 million families signed a pledge agreeing to give it a try.  The impact was huge!  In New York City alone, hotels reported that in just one week they’d saved 116 TONS of meat.
  4. It sets the tone for a healthier week! Monday is a great day to reset your mind and body on being healthier.  Going meatless on Monday and starting a new week of fitness can go hand in hand and help your family focus on leading healthier lifestyles.

Another great benefit I’ve found for Meatless Monday is that it’s forced me to learn how to cook some new types of food.  I make one awesome vegetarian curry now, and I’m not sure I’d ever cooked a lentil before I tried Meatless Monday.

My friend Jim needed a Meatless Monday recipe to start with (and I bet him a beer he’d like it)- so here’s an easy favorite of mine for people new to MM!

Veggie “Chicken” Parmesan

 1 box (4 patties) of Boca Chicken Patties   (http://www.bocaburger.com/products/chikn.aspx)

1/2 lb Spaghetti Noodles

2 cups of Mozzarella Cheese

1 jar of your favorite meatless spaghetti sauce (I like Newman’s Own Sockarroni!)

Super easy to do. Boil the spaghetti noodles, warm up the sauce in a pan.  Microwave the Boca Chicken patties (I promise these are delicious!) for 1 minute and 30 seconds each.  Then put the chicken on top of the noodles and the spaghetti sauce on top of the chicken and top with some cheese.  You can microwave the whole thing for a couple of seconds if you want to melt the cheese better. 

The best part about this meal is that the whole meal- with a big helping of noodles and everything- is under 500 calories! You won’t even miss the real chicken.Chicken Parmesan from Fazolis, for example, is 1000 calories- and that’s without a breadstick.
